Coffee Brewing Methods: French Press vs Pour Over vs AeroPress and more! - YouTube
Channel: European Coffee Trip
[0]
What's the best way to brew coffee at home,
[1]
or what聽coffee maker should I buy?
[3]
These two questions we get asked a lot
[6]
and questions are simple but the聽answer is complicated
[9]
and somehow personal because
[11]
as you can see on the table there are so聽many options out there.
[16]
Sponsor of this video is Standart
[18]
an independent print magazine聽about coffee culture
[21]
and people that surround it.
[22]
In this video we will give you a short but聽hopefully complete
[25]
overview of the most common coffee brewing methods.
[28]
We'll talk about French聽Press, Pour Over, Clever Dripper,
[32]
AeroPress, Moka Pot,
[34]
but also Ibrik/Cezve, Espresso, Drip Coffee or聽Coffee Capsules.
[38]
We'll show you each brewing method
[39]
in action, we'll talk about its pros and cons
[42]
and how it compared to other similar methods.
[46]
Okay, so let's start with French Press
[49]
that is聽probably the most popular and the most used coffee
[51]
brewer in the world.
[53]
Why? I think it's just because聽it's very simple and easy to use.
[57]
It has only two parts,
[58]
a jar and a plunger with plastic or metal聽mesh.
[62]
For brewing you add ground coffee pour hot water
[64]
and let it sit for a few minutes. Then you聽press the plunger down
[68]
and pour coffee into a聽cup or carafe.
[70]
Coffee usually get from French聽Press is of a higher body,
[73]
flavors are more mixed and less transparent
[77]
compared to pour聽over coffee and the liquid is more cloudy
[80]
as the filter mesh on the plunger doesn't collect聽all the tiny particles
[84]
as the paper filter does.
[86]
Because the whole coffee mess is in contact with聽water all the time
[89]
coffee is immersed in hot water
[91]
the French Press brewing belongs to the immersion
[93]
brewing category. So what are some pros of
[96]
brewing coffee with French Press?
[98]
It's easy to use and聽you can easily explain it to almost anybody.
[101]
You don't need any extra filters, pouring is simple,
[105]
you don't need any pouring kettles or brewing equipment.
[108]
You can buy it relatively cheap if you聽don't opt for more
[111]
fancy versions like we have.
[113]
You can brew bigger volumes, big French Presses are聽usually
[116]
around one liter. And what are some cons of French Press?
[119]
It's difficult to clean,
[121]
there is聽a sediment in the cup of coffee that you brewed.
[124]
The brewing takes longer, it's not a brewing聽method if you need
[128]
a coffee in a minute or so.
[129]
It lacks a clarity of flavor known for pour over聽coffee
[132]
unless you brew it for a really long time.
[136]
Let's talk about Pour Over coffee now.
[139]
What you know is probably one of these three popular brewers:
[142]
Hario V60, Kalita Wave and Chemex.
[148]
What they all have in common is that you pour hot
[151]
water over a coffee mass in the brewer,聽
[153]
water聽percolate through the coffee bed extracting all the flavors
[156]
along the way. All three methods use聽paper to filter grounds
[160]
from the resulting drink聽but other often used options are metal mesh
[164]
or聽cloth. For most pour overs you can expect coffee
[167]
to be brewed in two to four minutes.
[169]
Now let's look聽at some of the differences. You need to place V60聽聽
[174]
and Kalita drippers on a carafe or a mug, but聽Chemex servers
[178]
as a both brewer but also carafe.
[182]
They are all made from different materials. Chemex聽is glass,
[185]
we have both ceramic and plastic V60
[188]
and Kalita is from metal there are two聽things related to the
[192]
material choice.
[193]
First is heat transfer which means how much heat聽escapes
[196]
from water to brewer and another thing is
[198]
durability, how easy is it to break it. In both聽categories plastic
[203]
or metal performs better in聽my opinion than glass and ceramic.
[207]
The last thing聽is the shape of the brewer and the paper filters.
[210]
You see a big difference between conical聽shape V60 and Chemex聽
[214]
and flatbed shape Kalita.
[217]
It influence how water percolate聽through coffee and extract flavors,
[221]
but聽that's perhaps the topic for another video.
[224]
So what聽are some pros of Pour Over coffee brewing method?
[227]
It produces a very clean and transparent cup
[230]
thanks to the paper filtration, it's very popular聽聽
[232]
for the light roasted specialty coffees.
[234]
You have聽more control over coffee brewing process
[238]
it's a ritual and we can consider most brewers as design
[241]
objects and basic plastic drippers are cheap.
[245]
And what are some cons? Iit can be inconsistent,
[248]
it聽can be amazing one day and quite bad another day.
[252]
It's more complicated technique and you need to learn some
[255]
pouring style, you need quite better equipment.
[258]
Brewing kettle, scales to dial it in,
[261]
you are wasting quite a lot of paper filters.
[263]
And ground quality and consistency is quite聽important
[266]
for pour over methods.
[268]
Before we jump into the following brewing method
[270]
which is Clever聽Dripper let's talk about this video's sponsor
[274]
Standart - it's an independent print magazine about聽coffee culture
[278]

[280]
As subscribers we just received a new issue 22聽
[283]
with a sample of tasty Ethiopian coffee roasted by Lot 61
[286]
Amsterdam. Listing through the pages聽of Standart I quickly noticed
[291]
the underlying theme聽behind many articles and essays, animals.
[295]
I dive聽into a long-form essay about cat caf茅s culture,
[298]
explored burning questions about ethical aspects聽of Kopi Luwak
[302]
coffee and I also learned about the
[304]
farmer from England who specializes in producing
[307]
milk for coffee. The highlights of this issue
[309]
though were surprising article portraying Japan聽as a coffee
[313]
producing country. Talking about the first specialty coffee lots
[316]
grown there and also聽Scott Rao's recipe for the fruitiest espresso
[321]
you will ever try. So if you haven't subscribed yet you聽should go to
[325]

[329]

[333]
some of the best roasters in the world.
[337]
Clever Dripper聽is a nice combination between immersion brewing
[340]
like French Press and percolation like Pour Over聽coffee.
[344]
Similar to French Press most coffee mass
[346]
is immersed in hot water until the moment you open聽a valve
[350]
by putting clever dripper on a mug or a聽carafe.
[354]
Then it starts to act more like pour over聽dripper聽聽
[357]
as water passes through a bed of coffee
[359]
via paper filter into a cup or carafe.
[362]
It's common to use slightly coarser grind size than pour over
[366]
and also total brew time is a little bit longer.
[369]
Another immersion drippers on the market are Hario Switch,
[373]
December Dripper, Gina or Wilfa purover聽dripper.
[376]
So what are some pros of Clever Dripper?
[378]
You have more freedom to play with the grind size
[380]
since you don't rely purely on gravity.
[383]
It's easier to replicate method than Pour Over聽
[386]
and you don't聽need a brewing kettle or any specific coffee tool
[390]
And what are some cons?
[391]
It's more difficult聽to clean it properly and Clever Dripper, to be
[395]
honest, is not the most beautiful coffee brewer out聽there.
[398]
AeroPress. AeroPress is pressurized immersion聽brewer.
[401]
Unlike an espresso machine pressure聽doesn't come from a pump,
[405]
but from your hand.
[406]
Of course you have no way to generate that much聽force
[409]
so the resulting cup of coffee is very聽different.
[412]
Because you use pressure and sometimes聽also agitation
[415]
to speed up the brewing process
[416]
coffee extract much quicker than in French Press聽for example
[420]
and you can expect brewed coffee in聽one or two minutes.
[423]
AeroPress has three key parts -聽the chamber, the plunger
[428]
and the basket and there are two basic ways
[431]
how to brew with the AeroPress.
[433]
A regular method that comes from the inventor
[435]
is placing a chamber on a mug or carafe, adding coffee,聽hot water
[440]
and press it down but you can also put聽it upside down.
[443]
It's all called inverted method.
[445]
Add聽coffee and water and turn it just before pressing.
[449]
There is no right or wrong way to do it it's just聽a preference
[453]
and there are hundreds of recipes available for you to try.
[456]
You should also know that聽in addition to the regular AeroPress
[460]
in 2019 its smaller and even more portable little brother聽called
[464]
AeroPress Go was released.聽聽
[466]
Okay so what do we like about brewing coffee with the AeroPress?
[469]
It's聽portable, unbreakable, easy to travel with.
[472]
You brew聽different kind of coffee from short concentrated
[475]
espresso like coffee to big cup of black coffee.
[478]
It brews coffee quickly. Unless you have a specific聽recipe,
[481]
you should have your coffee made in one or聽two minutes.
[484]
It's easy to clean and it uses just聽a small tiny paper filter,
[488]
so there is less waste
[489]
and there is a lot of accessories built around the聽
AeroPress
[492]
like Prismo, Puck Puck for cold drip, metal聽filters
[495]
or even brewing stands.
[497]
And some cons聽of brewing the AeroPress?
[500]
You brew only limited amount of coffee which is 200 to 250ml.
[504]
The brewing process can feel a little awkward at the beginning
[508]
the number of recipes and sometimes聽conflicting recipes
[511]
can confuse you at the start
[513]
and coffee is little cloudy,
[515]
especially聽if you compare it to the Pour Over coffee.
[518]
Now if you want to learn more about AeroPress聽we actually produced
[520]
a full documentary film
[522]
about this iconic coffee brewer back in 2018.
[525]
You聽will see the inventor of the AeroPress Alan Adler,
[528]
People behind the world AeroPress Championship
[530]
but聽also coffee experts like James Hoffman or Tim Wandelboe.
[534]
It's called The AeroPress Movie and you聽can find the link
[537]
in the description.
[538]
Moka Pot is an Italian iconic stovetop coffee maker
[541]
that got very聽popular not only in Europe but around the world.
[545]
It was invented by Italian engineer Alfonso Bialetti聽in 1933.
[550]
Moka Pot consists of three basic parts
[552]
The bottom chamber where you pour water, the basket
[556]
for ground coffee and upper chamber that collects
[558]
brewed coffee. Unlike Pour Over coffee that聽relies on gravity
[562]
to extract coffee in Moka Pot
[564]
boiling water generates steam in a bottom chamber
[567]
that pressurized water through ground coffee
[570]
up into the collecting chamber. The strength is聽somehow between
[573]
espresso and filter coffee, perhaps closer to espresso
[576]
what makes it a popular option聽for mixing with milk.
[579]
What are some cool things聽about making coffee with Moka Pot?
[582]
You don't need聽any brewing kettle, water is heated up inside
[585]
of the Moka Pot. It's quite popular for camping since聽it's
[588]
very difficult to break. It's an iconic design
[591]
object that is featured in many famous museums聽of design
[594]
and modern art. And what are some cons
[597]
of brewing coffee with Moka Pot?
[599]
One thing is聽that it's quite difficult to control brewing
[602]
and it's also difficult to clean and cleaning
[605]
honestly is quite often neglected and since
[608]
you work with the boiling water under pressure
[610]
it can be dangerous if not operated carefully.
[614]
Now Cezve or a Ibrik.
[617]
It's an ancient brewing聽method that is still very popular in Balkan
[621]
countries, Ukraine, Turkey, Greece and many more.
[624]
It's聽known to produce a small and very strong cup of聽coffee.
[628]
The brewing process is quite simple you聽need a Cezve or a Ibrik,
[632]
you add ground coffee
[633]
which needs to be ground very fine, finer than聽espresso,
[637]
add water, coffee to water brew ratio is 1:10
[640]
and traditionally you bring it to聽the boil but
[643]
in more modern approach you stop just before that.
[646]
Then you pour everything into a cup聽it's an unfiltered method,
[649]
so grounds remain in the
[651]
cup but because it's very fine grind size
[653]
it sinks聽into the very bottom.
[655]
Coffee is very hot after its brewed, so you need to wait
[658]
before it gets to the聽drinking temperature.
[660]
What are some pros or brewing coffee with Cezve or Ibrik?
[663]
It's a simple聽straightforward method. It's a beautiful ritual and聽聽
[667]
copper Cezve is a beautiful object to use聽
[670]
and you聽don't need any filters.
[672]
And what are some cons?
[674]
It can get easily over extracted, you need a very fine聽grind size
[678]
so either you have a universal high-end grinder
[681]
or you need a dedicated grinder for this聽method
[684]
and you can brew a relatively small amount聽of coffee at a time.
[687]
If you want to learn more聽about this brewing method
[689]
check out the tutorial video
[690]
video we did with Turgay Yildizli
[692]
a mastermind聽behind specialty Turkish coffee.
[695]
Ok, now Coffee Drip聽Machine.
[698]
Coffee Drip聽Machines or Batch Brewers are聽basically automatic
[701]
machines to Pour Over coffee.
[703]
They vary in a style, function and also price.
[706]
The聽one we have here is called Technivorm Moccamaster
[709]
and it doesn't offer many features but is known聽for its longevity
[713]
both the temperature stability and quality of materials.
[716]
It can brew up to one聽and a half liters of black coffee at a time.
[720]
So, what are some pros of this method?
[722]
It's simple聽to use, just add ground coffee, water and turn it on.
[726]
You don't need any electric brewing kettle
[728]
and it聽brews more consistently compared to hand brew.
[731]
And what are some cons? It's definitely more difficult聽to keep it
[734]
clean especially if you use thermoses.
[736]
You have less control over brewing parameters,
[739]
it's more expensive machine than a simple pour over dripper
[743]
and it's a bigger machine so it takes聽more space on the counter.
[747]
We visited the Moccamaster factory a few years ago,
[750]
so check out the video if you want to learn more
[752]
about the production of these iconic coffee makers.
[756]
All right, Espresso.
[758]
Espresso is strong concentrated coffee with crema
[761]
that is brewed quickly under high pressure
[763]
in an聽espresso machine. Arguably is the most complicated聽聽
[767]
way of brewing coffee at home.
[769]
You have basically聽three options.
[771]
Number one - manual espresso machine
[773]
like I have in front of me.
[774]
It requires manual聽force to press hot water over ground coffee.
[778]
Number two - automatic espresso machine that聽uses a pump
[782]
to press water over coffee bed and number three
[785]
super automatic espresso machine with聽built-in grinders
[788]
that you control with the button.
[790]
What can be said about all three options is聽that it's way more
[793]
expensive than all methods we mentioned previously.
[796]
If you opt for super cheap聽machines
[798]
most probably they will either break
[800]
quickly or will not extract coffee properly.
[802]
So聽what are some pros of making espresso coffee?
[805]
Once set up and calibrated it it's brewed very quickly.
[808]
The taste of well extracted espresso is amazing
[811]
it's a good base for espresso drinks.聽
[814]
And聽what are some cons of this brewing method?
[816]
Espresso machines are generally expensive.
[819]
Unless you opt for super automatic machines
[821]
you need to learn how to dial in espresso.
[824]
You聽need an espresso grinder, which is usually more expensive
[827]
and cleaning and maintenance is聽very important
[830]
and more labor intensive.
[834]
A coffee capsule is a pre-dosed single-use container聽of ground
[838]
coffee, it's typically around 5.5 grams
[841]
for nespresso compatible capsules.
[843]
We don't usually聽suggest using pre-ground coffee
[846]
but since brewing espresso-like coffee at home is rather
[848]
complicated聽for many folks we wanted to add this method to
[852]
the comparison. The coffee brewing process is very聽simple.
[855]
You pour cold water into water tank, turn on the machine to heat up
[859]
insert the coffee capsule聽and push the button.
[863]
Heated water is pressed聽against the capsule
[865]
that serves as pressurized聽brewing basket into the cup.
[868]
Brewed coffee has a thin crema and strengths like lungo
[871]
or diluted聽espresso. Yet if using specialty coffee capsules it
[876]
can be very aromatic delicate and fruity.
[878]
Since聽Nespresso patents expired more coffee roasters
[881]
started exploring this space.聽
[883]
Colona Coffee in聽the UK was pioneering specialty coffee capsules
[887]
in Europe yet what made us purchase the machines聽were rare
[890]
coffee projects like Savage Coffee that brings competition lots
[894]
from their own farm in聽Panama
[896]
that are otherwise very difficult to get access to.
[899]
So what are some pros of coffee capsules?
[901]
It's extremely easy to use and user friendly.
[904]
You don't need any other equipment and coffee聽capsule machine
[908]
it brews very fast and it's relatively easy to clean.
[911]
And what are some cons?
[913]
Well it's not an Espresso coffee. It's not fresh coffee,
[917]
it's pre-ground and pre-dosed so it ages.
[920]
It produces more waste since each dose of coffee
[922]
is packed separately,
[924]
per gram of coffee is the聽most expensive option.
[927]
Now that we compare all the possible coffee brewing methods
[931]
it's time to tell聽you a little secret.
[933]
Whatever method you choose the聽most important
[936]
to actual taste is what coffee聽you start with!
[938]
That's right, any coffee brewer or聽machine will not improve
[941]
the taste of your coffee聽so rather than spending big money
[944]
on machines it's聽good to look into what coffee beans
[948]
you are buying.聽Some parameters to consider are
[950]
quality, freshness and roast level.
[954]
When it comes to quality what we聽use usually when we brew
[957]
in our office for these聽videos is specialty coffee grade.
[961]
So you might聽try to find a specialty coffee roaster in the聽location
[964]
you live in. When it comes to freshness聽it's good to know
[967]
when coffee was roasted and then聽don't wait too much to actually
[971]
brew it, because聽coffee ages and loses its characteristics and聽聽
[975]
qualities over time and the last thing is roast level
[978]
and here is important because we are talking聽about brew methods
[981]
and each brew method extract聽coffee differently and needs slightly
[985]
different roast style.
[986]
Now, surprise number two!
[988]
If you don't聽grind coffee fresh just before brewing you are聽聽
[991]
losing so much from the coffee potential, so if聽you can
[995]
get the grinder perhaps the best you can
[997]
afford at the time hand or electric and I believe聽you will not regret.
[1001]
Now it's your turn, let us know in the comments below
[1004]
what's your favorite brewing聽method and why.
[1006]
If you have any coffee making tips for the community
[1009]
please share them because we聽always learn a lot
[1011]
from reading your thoughts.
