subject that I'm just crazy passionate

about anyone who's seen any of my videos

or has ever talked to me on the phone or

been through any of my courses knows

that I harp on this management thing

because I think it's totally

misunderstood misinterpreted and I think

managers today are actually a little bit

lazy I don't think they really

understand and I don't think leaders
[42]
owners of restaurants really understand
[44]
exactly what a manager is and what they
[46]
should be doing in your restaurant so I
[48]
want to cut right to the chase here and
[49]
tell you what a restaurant manager
[52]
really is and what they should be doing

let's start off by seeing a quick
[57]
definition of how I define management
[60]
the responsibility of controlling or
[63]
administering all or part of a company
[65]
person's event department or project day
[69]
by day tasks by task
[72]
I think it's that day by day task by
[75]
task part that's most important look

management is sometimes boring
[79]
management is babysitting management
[82]
isn't sexy it's not always fun it's dull

it's management it's doing the same

thing over and over again it's making
[90]
sure that you're getting the results

when I think of management I think back

to a hundred years ago in a factory when

parts are rolling down the line and the
[98]
manager is walking by with a checklist

making sure that each person is exactly

where they're supposed to be making sure
[104]
that they're doing their job on time you

know today as restaurant managers they
[108]
like to walk around and greet customers
[109]
and talk with them and and Kipp it's a

little bit and have fun and that's all

great but really the restaurant managers

job is to make sure that things are
[118]
completed day by day task by task that

means that they have checklists they
[124]
have prep sheets they have
[125]
responsibilities they know when people
[127]
are supposed to come in when they're
[128]
supposed to come out there checking
[129]
measurements and metrics where are we at

in sales right now how much staff do we

have

on the floor what's going on in the
[134]
kitchen what's going on in table 14 how
[136]
come table 13 doesn't have water Steve

have you done your side work it's time

for you to go home we're slowing down a
[142]
little bit that's management one of the
[145]
things that I can't stand is when
[146]
managers or when owners say to me that
[148]
you know they're sick and tired of
[150]
babysitting their employees that's what
[152]
a manager is folks I hate to say it

managers are babysitters I love to use
[156]
this analogy how many times have you
[158]
asked your children did they brush their
[160]
teeth you know before you tuck them in
[161]
at night thousands of times probably
[164]
will there ever be a day that you're you
[166]
tuck your children in and you don't say
[168]
did you brush your teeth tonight it
[170]
doesn't mean you don't love them it
[171]
doesn't mean you're gonna fire them oh

this kids a bad kid he didn't brush his
[175]
teeth and I've told him 300 times

I'm firing him no you do it because you
[180]
love your children you're interested in
[181]
their success you're interested in their
[183]
teeth so you ask did you brush your
[185]
teeth did you brush your teeth

management is no different if you have a
[189]
no cell phone policy if when they come
[190]
into work they're supposed to put their
[191]
cell phones in a locker you can't just
[193]
assume that they did it every time you
[195]
see an employee and they check in for
[197]
the day that should be one of the things
[198]
on a sign-in sheet when they come and
[200]
they check in with their manager the
[202]
manager texts to make sure they're in
[203]
uniform the manager should also say do
[205]
you have your cell phone on it on you or
[207]
have you put it in your locker it's just
[209]
what we do and how many times are they
[210]
going to say oh no I forgot them they
[211]
have to walk back and put it in their
[213]
locker remember the role of the managers
[215]
to ensure the success not to get people
[217]
in trouble not to say like oh well you
[220]
didn't put your phone away so you're in
[222]
trouble today no it's just a reminder
[224]
we're managers after all so I want to
[226]
quickly give you four things that your
[228]
employees need out of your restaurant
[230]
managers the first thing your employees
[235]
need out of a manager is organization
[237]
and structure they need to know what's
[239]
going on and when it's going to happen
[240]
the second thing that your employees
[242]
need out of a good manager is they need
[243]
to know the rules of the game that the
[245]
rules aren't going to change is that
[246]
they're being enforced equally with
[248]
everybody that's where systems checklist
[250]
prep lists really come into play the
[253]
third thing that your employees need for
[255]
your managers is the tools to do their
[257]
job properly
[258]
they need to know that they've got the
[261]
checklist they've got the prep list that
[262]
the equipment's working that your
[264]
managers are there to ensure their
[266]
success and
[267]
that's really the fourth thing is that
[268]
commitment to success I want to end on a
[271]
quick story almost an analogy here about
[273]
comparing a manager to a conductor you
[276]
know when you look at an orchestra and
[277]
the conductor has their little stick and
[279]
they're waving it everybody in the
[281]
orchestra knows the music they've all
[282]
reversed that they know how to play the
[284]
violin they're great at their job so why
[286]
do we have that conductor there the
[288]
conductor is there pointing their little
[290]
stick because the conductor is hearing
[292]
and seeing what the audience is seeing
[294]
just like your manager should be walking
[296]
on the floor you know the conductor
[298]
saying we need more violin drums get
[300]
ready bass we're coming in in a second
[303]
the conductor is a little bit ahead of
[305]
the of the orchestra he's organizing it
[308]
he's letting people know what's going on
[310]
just like your manager should be your
[312]
manager should be walking the floor and
[314]
know what's going on like I said earlier
[316]
how come this table doesn't have water
[318]
what's going on on the food here how
[319]
come table 14 looks angry can we speed
[322]
up table 15 a little bit I've got a long
[323]
wait if your managers are not active on
[326]
the floor doing their checklist doing
[329]
their prep sheets making sure your staff
[330]
has the tools they need to succeed
[332]
making sure that the rules of the game
[334]
are followed and making sure that
[335]
everybody is on the same page and that
[337]
they're committed to their success it's
[339]
time to sit down and have a coaching
[340]
session with your manager maybe you need
[342]
to give them some more tools maybe you
[344]
need to help them develop those
[345]
checklists to make sure that they can do
[347]
their job properly in turn your
[348]
employees can do their job properly in
[350]
turn your restaurant will have the
[352]
success that you want listen if you
[354]
