Behind the Scenes Tour: The Egg - YouTube

Channel: The Culinary Institute of America

[6]
welcome to the egg this is our newest facility here on campus specifically for
[11]
US students it's a place for us to hang out it's a place for us to eat it's a
[15]
place for us to be ourselves and let me take you around today so here at the egg
[20]
we have plenty to choose from you can order from the center kitchens which you
[24]
go up to the kiosk and you can order anything from sandwiches to sushi can go
[28]
up to the innovation station you can go to the line which is manned by cih
[32]
students and it's a production kitchen or finally you can go to the marketplace
[36]
and get juices fruit and other different products to go we have ample seating we
[42]
have comfortable couches for you to hang out on we have Wi-Fi high-speed Wi-Fi
[47]
and best of all has your phone ever run out of battery here at the egg you'll
[51]
never have to we have charging ports all around the area
[62]
what other schools can boast assini really like this one huh we have a stage
[72]
for a student performance this space can be used to host musicians comedians or
[78]
even have karaoke night so this is the line this is our high-volume production
[86]
kitchen here on campus entirely student man and student-run so let's go talk to
[92]
chef Ford to see what's going on so chef what goes down in the line the
[100]
state-of-the-art facility it's got some extremely interesting equipment in here
[103]
we have a controlled vapor machine we have a blast chiller we have a
[106]
programmable rationale of an etcetera etc as you can see by the size of the
[110]
kitchen it's about two to two and a half times as big as any of the other
[113]
kitchens in the main building so what kind of food can the students
[116]
expect to eat from this kitchen the menu is actually about twice the size of what
[120]
we've done up in the other kitchen up in the main building the food we like to
[124]
call it self-help what we've done here we've done a little more plant forward
[127]
food as opposed to the proteins the animal proteins being Center the plate
[131]
we're looking at more of the plants grains a lot of that type of food being
[135]
incorporated into but still well-constructed plates we have six
[139]
different salads three vegetable base three grain salads we have four
[143]
different soups we run some are just vegetable purees some are vegan soups
[147]
for focusing on that area as well we don't like to say necessarily healthy
[151]
food because people have a connotation that it's not going to have a flavor but
[154]
we're backing it up with the flavor flavor profiles so behind me this is our
[158]
innovation station this is the home of the intrapreneurship concentration in
[163]
our bachelor's degree so these students are pitching their ideas to a board and
[169]
the team with the winning idea will get to come up with their own marketing plan
[173]
they'll have to order their own food they test their own recipes and
[177]
ultimately see that plan come into fruition so what do we got to do is the
[181]
other students who get to eat it of course
[187]
welcome to our brewery we have a partnership with Brooklyn Brewery here
[191]
on campus to brew our own beer this class is taken during our junior and
[196]
senior years here on campus in the bachelors degree hey guys what's your
[202]
favorite part about the egg no I think it's modern the food here it's all the
[206]
diversity got ramen sushi so our sandwiches and pizzas and I really like
[213]
it here we can hang out do homework or project work nice points to get away
[219]
from the main hall there's a lot of food options here and it's quick and easy
[223]
favorite part about the egg has to be the marketplace I love having the
[227]
ability to go on the weekends and get food that I can prepare myself
[232]
instead of instead of having someone else go and cook for me
[235]
I think my favorite part is definitely got to be that it's so social we get to actually interact
[238]
with students and get to meet people from different start dates and different
[241]
classes because where when you start normally you've kind of stuck with your
[244]
start class but here another they've got the eggs you can actually mingle with a
[248]
bunch of different types of people so it's really good
[250]
my favorite part is that we sell Brooklyn free beer and I've built up
[255]
wine as well did you get any larger than quartzite
[259]
and so the dining is huge the region you can eat more helpfully the egg is an
[265]
incredible facility so when you get here come check it out
