How to Get Flat Cake Layers - YouTube

today i'm showing you how to get my

signature flat cake layer

this is what happens to a lot of people
[7]
that don't use cake strips you get a
[9]
domed cake it's darker and harder on the
[12]
outside and it's not flat and fluffy on
[15]
the edges you really want a nice moist
[18]
cake that's moist through and through
[20]
without having to cheat and pour sugar
[23]
water on top
[25]
i don't do that because my cakes are
[26]
moist
[27]
anyways let's get started okay there's a
[30]
couple different ways to do this
[32]
one
[33]
buy some cake strips these are just
[35]
fabric strips and there are tons of
[38]
companies that make them mine are from
[39]
wilton and i'm not getting paid to say
[42]
that although i should be
[46]
so anyways i like this set because they
[49]
move so you can do
[51]
a nine inch cake an eight inch cake a
[53]
six inch cake and you just you know
[56]
adjust
[57]
then you just dip them in water and
[59]
you're going to
[61]
cover the outside of the pan with that
[64]
but what if you don't want to buy some
[66]
what if you're handy or you just don't
[68]
feel like buying extra stuff then you
[70]
can make your own using tin foil and
[73]
paper towels which is what i did for
[74]
like years
[76]
and i'm going to show you that too
[77]
when you're making your paper towel tin
[79]
foil situation you're going to use a pan
[82]
and basically figure out
[85]
the length of the pan on the exterior
[88]
edge
[89]
you can do that just by wrapping paper
[91]
towel around it but
[94]
it doesn't have to be exact it could be
[95]
a bit over
[97]
more than enough totally good
[100]
wet the paper towel and wring it out so
[103]
it's not totally soaking wet but still
[106]
wet
[107]
then
[108]
the hard part is to

unfurl it since it's kind of wet now
[115]
and we're gonna fold the paper towel
[119]
fold it so it's like about two inches
[122]
now for the tin foil which is super
[124]
crinkly so i'll say this first

you're gonna
[127]
get enough tinfoil so that you have like
[130]
maybe two inches on either side free
[133]
put the paper towel on top and then
[135]
start folding basically you wet the
[137]
paper towel and now you're wrapping it
[139]
in tinfoil which will hold the moisture
[141]
in

during baking that's it you're done now

you have your homemade tin foil and
[148]
paper towel baking strip and it was
[149]
basically free
[151]
let me show you how to wrap it around
[152]
and then we'll get to the fun part
[155]
so just place your pan sideways
[158]
wrap the tin foil around it and then
[160]
crimp the edge a few times so that it
[163]
holds its place if yours is way too long
[166]
go ahead and cut it it's not a big deal
[168]
and then just fold the edge underneath
[171]
so that it is kind of like really in
[173]
place you don't slip off fabric version

works exactly the same way i like to
[178]
soak them for a while so they really get
[181]
wet so so you'll see the water get
[184]
absorbed and then after a few minutes
[187]
just wring it out
[188]
leave some water in there
[190]
but you just don't want them sopping
[191]
dripping wet
[193]
after you're done apply to the pan
[196]
and you're ready to put your batter in
[198]
if you're wondering why cake's dome in
[200]
the first place let me tell you it's
[202]
super fun okay so when you put the cake
[204]
in the oven
[205]
the outside bakes faster than the inside
[208]
because it's exposed to the heat of the
[210]
oven where the inside is insulated by
[212]
the cake batter surrounding it so what
[214]
happens is that the outside bakes first
[217]
the moisture goes away it forms its
[220]
little cakey texture and it's frozen
[223]
while the inside bakes slower and
[225]
continues to rise which is nice
[228]
in that it's nice and fluffy and the
[230]
outside is burnt
[232]
but we want a uniform bake so how do we
[235]
do that we do that by cooling the
[237]
outside of the cake
[239]
with water so you use something that'll
[241]
hold water onto the outside of the cake
[244]
and then you'll get
[246]
flat cake layers that are really fluffy
[248]
on the outside
[249]
not caramelized not dark like almost
[252]
like magic okay so for demonstration
[255]
purposes i'm going to make three cake
[257]
layers
[258]
one with the fabric strips on
[261]
get it on tight
[262]
one with my homemade tin foil version
[264]
and one
[265]
will be sacrificed and makes me so sad
[268]
to do this with no cake strip so it's
[270]
our control and you're probably going to
[272]
see some doming and some
[275]
kind of crunchier edges which i hate but
[278]
it's just to show you that's how much i
[280]
care
[281]
alright making my favorite vanilla cake
[284]
so as a bonus you can make this recipe
[286]
and
[287]
enjoy like the most moist and delicious
[290]
vanilla cake ever okay
[292]
starting off by sifting our dry
[294]
ingredients 1 2 3 cups of all-purpose
[296]
flour
[297]
one heaping teaspoon of baking powder
[300]
and one heaping quarter teaspoon of
[302]
baking soda one cup of granulated sugar
[305]
and like a generous pinch of salt
[308]
sift it up
[310]
just give it a nice sift sifting's nice
[312]
because
[313]
you make sure that there's no lumps and
[315]
it also pre-mixes things so you're extra
[318]
sure there's no big hump of leavening
[320]
each and hanging out anymore we're gonna
[322]
give this a quick whisk and set aside
[324]
for the wet ingredients i'm adding in
[326]
half a cup of sour cream
[328]
which adds a lot of moisture
[332]
half a cup of milk
[334]
i'm using three egg whites for this
[335]
recipe you can totally use eggs whole if
[338]
you want but for a vanilla cake i love
[340]
it to be nice and light and not a yellow
[343]
cake some people love yellow cakes
[345]
though so if you do
[346]
go ahead and use the whole egg and have
[348]
the sour cream three teaspoons of
[350]
vanilla extract
[352]
and now three quarters of a cup of
[354]
basically melted butter
[356]
you can melt it all the way if you want
[357]
i don't
[359]
i'm going to give it a nice whisk and
[361]
it's almost done
[363]
all right this is whisked up now we're
[365]
going to combine and we're done
[367]
but first
[369]
i have to prep my pans
[371]
when i prep my pans all i do is butter
[373]
and flour them that's all you need
[376]
then kind of even it out with my fingers
[379]
this works really well if you're um
[382]
using harder butter mine's room
[384]
temperature though so just a word to the
[386]
wise
[388]
there are lots of different cake release
[390]
sprays you could do too but
[392]
those are not like natural ingredients
[394]
so i would skip those and now for my
[397]
last pan the control i feel so sad it's
[400]
like throwing a cake away because it's
[402]
not going to be nice and uh
[404]
fluffy on the edges like it should be
[407]
grab a little bit of flour and just kick
[408]
it around in the pan so that it coats
[411]
the butter
[413]
now we're going to combine our wet and
[414]
our dry and give it a nice
[420]
mix get those perfect even layers i'm
[423]
actually going to take the cake strips
[424]
off pour the batter in and then measure
[426]
it out with a kitchen scale to make sure
[428]
each way is the same
[430]
then put the strips back on and then
[432]
bake them
[433]
now we're reattaching our cake strips to
[435]
two of the pans
[437]
and they're going to go into the oven
[439]
i will tell you that sometimes when
[440]
you're using cake strips you have to
[442]
increase the bake time a bit because
[443]
you're cooling the outside so just give
[445]
it a few more minutes just take it out
[448]
test the center to see if it's springy
[449]
and you can also watch the edges because
[451]
they should be pulling away from the
[453]
sides
[455]
these are going to go into the oven at
[457]
340 fahrenheit for about 35 to 40
[459]
minutes depending
[461]
okay so my cakes are out of the oven and
[463]
i have to tell you
[465]
look how sad this is this is the naked
[468]
one without the cake strips it's all you
[470]
see how brown and
[472]
stunted and slow and not happy it is
[476]
let's take it out here

yeah

look at that color

i mean it smells good but do you see how

this is like

it's like not as fluffy as it should be

like look at this dome do you see that

that's not cool you have to like cut it

down it's like a waste now you have

you should be able to see

nice flat layers

crazy dome not cool and here we have our

tinfoil version and you can see it baked

up nice and flat and

it's still really soft so both ways work

really well i'm going to tell you the

tinfoil one doesn't last forever you get
[532]
like five bakes and it kind of
[533]
disintegrates so i don't know if you can
[535]
see this but

this is the naked version and you can
[539]
see like i feel it i don't know if you
[541]
can see how like hard the edges
[544]
this is the cake strip version
[547]
and this is the other cake strip version

whether or not you're going to buy cake
[551]
strips make your own out of tin foil or
[553]
fabric or whatever else you want i hope
[556]
you give this technique a try because it
[558]
really improves the quality of your bake
[560]
your cake will rise up more it'll be
[563]
softer and you'll have a nice flat top

which is so easy to decorate with no
[568]
more cutting
