The ESSENTIAL Spirits | 15 bottles to build your bar! - YouTube
Channel: Anders Erickson
[0]
Hi, it's Anders! Today I'm going to tell you my top聽
bottles and spirits to help you build your bar.聽聽
[4]
Don't worry we're going to make sense of all聽this.
We'll break it down one by one.
[7]
I promise.
[9]
[intro music]
[14]
Welcome back!
[15]
I recently spoke to a few of you who聽
have said you're building cocktails along with the聽videos,
[18]
and I think that is super cool.
Thank you so much! 聽
[21]
If I were to start a bar from scratch, these would be the first bottles I would buy.
[25]
So let's聽get started.
[27]
Number one - rye whiskey.
[28]
First on my list is rye whiskey, and that is because rye is the聽
workhorse behind my bar.
[33]
By rule, rye has to be at least 51% rye in the mash bill.
[37]
And what that does聽is
it makes a whiskey that is a little bit spicier聽-聽
[41]
that I really like to mix with -
because it cuts through citrus and sugar and bitters.聽
[46]
It really holds up in cocktails.
So rye whiskey is my go-to for whiskey.
[51]
Also I like to make classic cocktails,
and the recipes call specifically for rye whiskey.
[56]
I recommend Rittenhouse Rye.
[58]
It happens to be a hundred proof, but what I like about it, 聽
is it's very balanced, it's affordable, and it's readily聽available.
[65]
I really like Rittenhouse.聽
If you want a lower proof whiskey, I would go with Old Overholt,聽聽
[69]
which is also readily available, balanced, and less expensive.
[73]
Number two - bourbon.
[75]
Bourbon is another whiskey that I like to have behind the bar.
In fact, I considered whether or not this made the absolute聽essentials,
[81]
but the truth is, if I were building聽up a bar,
I would grab a bottle of rye whiskey and聽聽
[86]
I would grab a bottle of bourbon.
Bourbon has to be at least 51% corn.
[90]
There are other rules as well, but the important thing is it's a sweeter聽
whiskey because of the corn.
[95]
I really like it with citrus, or a drink that has a lot of bitters -
like an Old Fashioned.
[100]
It's also just really good on its own.
I will have bourbon neat and be happy.
[103]
Buffalo Trace has been my go-to for a long time,
[106]
but there are a number of other good bourbons out there.
You can end up spending lots and lots of money, 聽
[112]
or get quality bourbon for a low price.
If you are looking for a cheaper bourbon that is really, really good,聽聽
[118]
I'd highly recommend Evan Williams Black Label.聽
All right, moving on.
[122]
Number three - scotch.
[123]
Another whiskey that I like to mix with because it just聽
tastes very different than both bourbon and rye.聽
[129]
There are a number of different styles of scotches,聽
and when it comes to mixing, I prefer a blended.聽聽
[135]
This is a blended malt whiskey.
Monkey Shoulder is just a great value for the price, 聽聽
[139]
and it goes well in classics like the Blood and Sand,聽
or a contemporary classic like the Penicillin.
[145]
There are also single malt scotches for those that聽
are really into flavor.
[148]
You've got the blended scotches, which are more about smoothness,
and then the single malts, which are about flavor.聽聽
[154]
So if you like a big, smoky scotch, then you might want to go聽
with Laphroaig 10 Year, which is an Islay scotch.
[160]
You are going to spend a little bit more money,
but it'll be worth it. i like to actually have聽聽
[163]
I like to actually have both of these behind the bar - but not necessary.
If there was just one bottle I had to have,
[169]
it would be the Monkey Shoulder for mixing.
[171]
Number four - gin.
[173]
We finally moved on from whiskey.
[174]
Not everybody is a whiskey drinker,
so you should have gin behind your bar.
[178]
Gin is in.
[181]
Gin is called for in a number of classic cocktails as well.
[184]
There are styles that聽range from
Dutch style gins known as genever,
[188]
your old tom gins, your navy strength gins - which are聽stronger,
London dry styles, Plymouth style,聽
[193]
and new American style.
I like the Plymouth gin because it tastes good,
[197]
and it's not quite as juniper-driven as a London dry.
It mixes well, it tastes good on its own, and it's at a good price point.
[204]
It's also a pretty bottle.
[205]
If you do like a gin and tonic,
then you might want to stick with the London dry style.聽聽
[209]
In which case, I like Brokers very much.
As far as other styles that I like,
[213]
a lot of smaller distilleries are doing new western styles,
and there's some really interesting stuff out there.聽
[219]
This is Journeyman Distillery's Bilberry聽Black Hearts Gin,
which happens to be local聽for me,
[223]
but I think that you should go out and find聽a local distillery,
and support them, and see what聽they're up to.
[228]
Number five and six - light and dark聽rum.
聽
[232]
Rum, rum - here we go. This is a tough one.
[234]
I narrowed it down to two very different rums,
but there are 30 different rums.
[239]
There are so many different styles of rum. This was really difficult,聽
and if I was building a tiki bar,
[243]
I would have at least half this list, if not more, would be rum.
[248]
But聽for this list, I've come up with
light rum and dark聽rum.
[252]
And when I say that I'm not referring to the聽color of the rum.
I'm talking in terms of flavor.聽聽
[257]
Light rum - and light flavor, and dark rum - not really聽
dark flavor, but full flavor.
[262]
So I should say light and full - I guess.
[263]
As far as light rum, I really like聽the El Dorado 3 Year.
It's been aged for three聽years and then charcoal filtered,
[268]
so it's a really聽smooth rum that goes well in daiquiris and mojitos.
You can get quality rums for low prices.
[275]
If you're looking for an affordable light rum,
I'd recommend聽Don Q Puerto Rican.
[279]
As far as the dark rum,
I like the Hamilton Jamaican Pot Still Black.聽
[283]
It's really big flavored, holds up in tiki drinks.聽
It's a fun rum to work. with if you want a rum聽聽
[288]
If you want a rum that's a little less assertive,
I would recommend Appleton Estate Jamaican Rum.
[292]
I always have that on hand too. I almost put that in this category,
but I'm really excited about this rum right now,聽so that's why it's there.
[301]
Number seven - brandy.
[303]
Brandy is a staple you want to have behind your bar
because it's called for in classics like the Sidecar,
[307]
which is one of my personal favorites.
[308]
Brandy is a distillate made from fruit, most聽notably grapes.
Kind of the most sought after would聽be cognac,
[313]
which comes from a specific region in聽France,
but there's also armagnac, and then brandies聽from all over the world.
[320]
Maison Rouge, however, has聽been my
go-to brandy for many years.
[324]
And I love it because it's a V.S.O.P. cognac that is very affordable.
It is round, and balanced, and mixes very, very well.聽聽
[332]
You do really only need one bottle of aged聽brandy,
but I happen to have two.聽
[337]
Korbel - I have this for one reason, and one reason only,
and that's to make a Wisconsin Old Fashioned.聽
[342]
California brandy is lighter and sweeter than聽cognac,
and I grew up in Wisconsin, so it reminds聽me of home.
[348]
But that'll be another episode.
[350]
Number eight - tequila and/or mezcal.
[353]
This is something you wanna have behind your bar because sooner or later聽
you're gonna have a friend that orders a margarita.聽聽
[358]
Thing about tequila is unlike rum, don't go cheap.聽
Spend a little bit more money and get a decent tequila.聽
[364]
Look for 100% agave.
A lot of the cheaper tequilas will use agave flavored spirits聽聽
[370]
just as filler. That's a headache waiting to happen.聽
There are a few bottles that I fear behind the bar,
[375]
and one of them is cheap tequila.
This is a blanco tequila, also known as a silver tequila. 聽聽
[380]
There's also reposado and anejo, and those are different聽
levels of aging. For mixing, though, I go with聽a blanco or reposado.
[388]
As far as the mezcal,
you can use mezcal interchangeably with the tequila.聽聽
[392]
It does have a different flavor profile though, and聽
has more of a smoky aspect to it.
[396]
I prefer to mix with mezcal, actually.
[399]
Siete Leguas Blanco is a聽really nice mixing tequila.
Highly recommend that聽one,
[403]
and as far as mezcal, Vida de San Luis del Rio聽is a really good mezcal.
This is kind of an entry聽level as far as smokiness.
[410]
They do get smokier, but聽taste them and see what you like.
You're probably聽gonna be like me and get both these bottles.
[415]
Number nine - vodka.
[417]
Okay vodka.
[419]
There's always going to be somebody who doesn't like the taste of聽alcohol,
and vodka is the perfect answer because
[424]
by definition it is flavorless and odorless.
This is also another opportunity to support smaller聽distilleries.
[430]
I really like this Rider Vodka from聽Union Horse Distilling.
It's made from 100% wheat,
[435]
and it has a creamy texture that adds something聽
to the cocktail other than just firepower.
[441]
Vodka is great in mules, or you can swap them out for聽
white rum, gin. Not called for in a lot of classics.聽聽
[449]
However, it's really easy to work with. 聽
Just pour this into a glass of lemonade and you got yourself聽a聽
[454]
cocktail of sorts. If you want a more readily聽
available, bigger name, classic Russian style vodka,聽聽
[460]
then Russian Standard would be a good one.
Pick a vodka that - that you like the taste of nothing.聽聽
[467]
I'm sorry.
[468]
If you don't want to taste booze,
but you want to drink, have vodka!
[472]
Number ten and eleven - sweet and dry vermouth.
[476]
These are the first of our modifiers.
The Italian style vermouth is a聽sweet vermouth,
[480]
and the French style vermouth is聽the drier vermouth.
These are part of my essentials聽because
[484]
they're called for in numerous classic cocktails.
You're going to use the sweet vermouth聽聽
[488]
in a Manhattan, the dry vermouth in a Martini or聽Brooklyn.
They're fortified wines that once opened聽聽
[494]
should be kept in the refrigerator.
So I've said it before, but get yourself a smaller bottle unless聽聽
[499]
you are guzzling vermouth. The sweet vermouth that聽
I like is Cocchi Vermouth di Torino, which is a richer聽vermouth.
[505]
and the dry vermouth is Dolin, which is聽
kind of a lighter style vermouth.聽
[510]
If you're feeling adventurous, you might want to try something like聽
Lillet Blanc, Lillet Rouge, or take it a step further聽聽
[516]
and use some sherries - which are outstanding in聽cocktails.
Not part of my essential list but if聽there's sherry behind the bar,
[522]
I'm excited to mix聽with it.
I've got an amontillado sherry here which聽is a drier sherry.
[528]
When I'm talking about this I'm not talk about
dessert sherries like cream聽sherry,聽but the drier ones.
[533]
They go really well with聽base spirits.
That's if you're feeling adventurous.聽
[536]
But vermouth, you should definitely have.
[540]
Number twelve - orange liqueur.
[542]
This is one liqueur that I've got on the list.
[545]
It was hard because there are many聽
many liqueurs out there, and orange liqueur is聽聽
[550]
called for in a lot of different cocktails.
And there are different kinds of orange liqueurs as聽well.
[555]
So the two main ones - you have your cura莽aos,聽
which are going to be brandy based, and then your聽聽
[561]
triple secs, which are grain spirit based.聽
The triple secs tend to be a little bit drier and聽聽
[565]
the cura莽ao is a little bit richer, but all of聽
them will vary as far as level of sweetness.
[571]
So I like to have a few different ones behind the聽bar.
Not necessary. The one I find I use the most聽聽
[576]
is the Pierre Ferrand on Dry Cura莽ao, which I've mentioned聽
in my videos in the past. But I do keep a richer聽聽
[582]
cura莽ao, and then I like to have a triple sec as well.聽
If you wanted to go with more of the聽triple sec style,
[588]
I really like the Luxardo Triplum.聽
The Marie Brizard is a richer cura莽ao,
[593]
and if you like things a little sweeter and richer,
then this would be for you. Otherwise Grand Marnier is a great example of this.聽聽
[601]
But yeah - it goes drier to聽sweet,
sweet to dry, dry to sweet, but my go-to,聽聽
[606]
I really like the Dry Cura莽ao from Pierre Ferrand.聽
[609]
Number thirteen - an ap茅ritif or digestif.
[611]
Hold on.
[612]
So an aperitif is a bitter spirit that you're聽
going to have before a meal. It's to kind of kick-start your appetite.
[619]
And the digestif is a聽slightly bitter spirit
that you're gonna have聽after a meal to kick-start digestion.
[626]
They're meant聽to be enjoyed on their own,
but what I like about聽them
[629]
is they add a bitter component to cocktails.
And if I had to choose one - I mean, I like to have聽聽
[635]
all of them, don't get me wrong - but if I had to聽
choose one, Campari is the go-to because there are聽聽
[640]
a lot of cocktails that call for Campari.
Like the Negroni or the Boulevardier.
[644]
There's a family of cocktails that all kind of stem from Campari.
There are other options. If you wanted to go a聽little sweeter,
[651]
then I'd recommend Aperol, but聽
Campari is definitely - on my bar - is one that I聽聽
[655]
like to have on hand. Alright, number thirteen is Campari.
Done.
[659]
Number fourteen - absinthe or pastis.
[662]
Some cocktails will call for an absinthe rinse in the glass,聽
like the Sazerac, a Corpse Reviver Number 2,聽
[668]
or if you want to mix something like a Momisette.
I like to put it in a misting bottle because that聽聽
[673]
way you're not wasting it when you make the rinse in the glass.
You're not having to pour it in and then dump it out.聽
[677]
You can just spritz it聽in
and get exactly the right amount that you need.聽
[681]
Absinthe is an anise flavored spirit.聽
Pastis came along when absinthe was banned because it was made聽with wormwood.聽
[689]
Which everybody thought made you聽crazy.
That was in the early 20th century.聽
[693]
Pastis is essentially a spirit with the same flavor profile聽
as absinthe, but without the wormwood.
[699]
Now absinthe is legal and you can get the real deal with the聽wormwood.
You're not going to go crazy, but you聽might get really drunk聽
[705]
because it is high proof.
And it's rather expensive, so they do offer it in聽smaller bottles.
[711]
I do like La Clendestine, which is聽a Swiss absinthe.
They come in all different colors.
[717]
So you have your traditional green absinthe,
you've got a white or blue absinthe, red absinthe.聽
[722]
If you wanted to go the pastis route, then you have Ricard or Pernod.
So get a little bit of absinthe, or pastis, and you're good to go.
[730]
Number fifteen - bitters.
[732]
Bitters is something that every bar should have.
[734]
Everybody says it, "It's the salt and pepper."
[737]
Hmm? Everybody? Everybody out there's saying it right now - I can hear 'em.
[740]
It's what makes everything聽so good, and it brings everything together.
And you just need a few dashes.
[745]
If I were to only have one bitters,
it would be Angostura Aromatic Bitters聽聽
[749]
because it is the classic cocktail bitters.
But I will say that with bitters, this is an opportunity聽聽
[754]
for you to kind of let your personality show.聽
There are so many different kinds of bitters out there聽-聽
[760]
if you want to cherry bitters or tobacco bitters.
It's incredible. The list goes on and on.
[764]
So you can have a huge collection of bitters or聽
you can make your own. I do also like to have,
[770]
while we're on the topic, an orange bitters on hand聽
and Peychaud's Bitters - which Peychaud's is another
[776]
aromatic bitters from New Orleans.
If I had to pick one bitters though, it would be Angostura Bitters.聽聽
[781]
It's traditional, it's the original, I use it in cocktails,
and I do it by the shot.聽
[785]
Bitters, bitters - bitter, bitters, bitters.
[787]
I could conclude the list聽there,
but I do have a couple of honorable mentions.聽聽
[791]
Maraschino liqueur and Chartreuse.
[793]
Both of these are called for in classic cocktails,
[796]
and I use them quite often.
[798]
Maraschino is a cherry liqueur, and Chartreuse is an herbal liqueur.
[802]
If I were to step behind a bar and they didn't have either聽
one of these it wouldn't be the end of the world.聽
[806]
So that's why they're not on my essential list,
but it wouldn't be long before I took off and went to聽聽
[812]
the liquor store to buy them. If you want to get聽these,
they do come in smaller bottles.
[816]
Especially the Chartreuse, it can be a little bit expensive.
[819]
I have half a cocktail right here.
This is half聽of the Last Word.
[823]
Liqueurs - it's tricky because there聽are so many different liqueurs.
It depends on the聽cocktails you like.
[828]
You know - if you want to聽be making a Brandy Alexander,
you're going to need聽a chocolate liqueur.
[835]
Or if you like White Russians,聽
you're going to want a coffee liqueur.
[838]
Your list can go on and on and on if you want,
or you can take some of the things out that I mentioned
[844]
and build your own list.聽
I will say that if you're building up your bar from nothing,
[847]
just think about the drinks you want to make,聽
buy a couple bottles, and then one at a time just聽let your bar grow.聽
[854]
Thank you again for making your cocktails with me.聽
You make me so happy.
[859]
Follow me on Instagram if you want, and send pictures of the聽
cocktails that you make - I will put it on my story.聽聽
[865]
Other than that, if you like this video, like and聽subscribe.
And I will see you next time.
[871]
Cheers!
